On the ground floor, Canton Blue, the hotels innovative Chinese restaurant, will celebrate the spice-trade union of Asian and British cultures with menus of creative dishes, along with cocktails, and artisanal teas. An exceptional opportunity to join our high-profile flagship hotel in London Market-leading remuneration, service charge, and attractive benefits Join our award-winning group, working alongside a highly experienced team Key accountabilities Promote The Peninsula London in becoming a recognized culinary destination by creating memorable guest experiences through artistry, communication with customers and uncompromised passion for excellence Get food ready with great consistency at the assigned service position, handles high- priced products and VIP's orders in person Daily track and record the net weight of food ingredients after being processed Check that the fish tank, all Canton Blue's refrigerators, freezers and walk-ins are fucntioning normally on a daily basis and that ingredients received are of required quality Ensure that the hotel policies and procedures are followed and prevent wastage of surplus stock without undue sacrifice on food quality Ensure personnel, physical and environmental hygiene is maintained in adherence to HACCP, supervise departmental employees grooming daily Develop, motivate, supervise and coach departmental employees in maintaining a culture in compliance with our mission, vision, values, and core HSH principles General requirements Minimum of 2-5years experience in Sous Chef or No.1 Chopper position and minimum 8-10 year experience in a 5-star hotel with a Chinese banquet or restaurants Extensive Cantonese food cooking techniques and knowledge with the ability to recognise current culinary trends Extensive experience in managing chefs Extensive Cantonese food cutting techniques and knowledges, understand current culinary trends.
